Our class takes the mystery out of wine!
Our one day Wine 101 class is but one grape of knowledge in a 1,000 acre vineyard of grapes of world wide wine knowledge. Completing this class will not make you a Sommelier, however, you will learn a lot and be more comfortable with wine. It is is designed for chefs and servers new to wine as well as those under 21. The class is fun, fast paced and not at all snobby!
Through videos, interactive bottle, glass and equipment displays -as well as hands on sensory analysis- we cover a range of wine topics. Our class is crafted to increase one's wine knowledge and confidence. It helps chefs better understand their wine food pairings with regional and international cuisines and empowers servers to sell more wine which will increase tips.
This class focuses on 18 Noble grapes varieties, exploring their history, characteristics, notes and geographic areas where they are grown. We use Pinot Noir, Gerwuztraminer and other varietal grape juices for training, so no alcohol is served, ensuring folks arrive to their evening shift 100% sober.
The class answers questions like: How is wine made? What's the difference between New World and Old World wines? Are still and sparkling wine production the same? What's the difference between aroma and bouquet? What glasses are used for what wine? How do you open a bottle of still or sparkling wine? How do you saber a bottle of Champagne? How do you serve wine, and at what temperature? How do you read wine labels? What is decanting and why is it done? How do most wine tools work? What are the best food & wine pairings? How do you taste wine? What are the most famous wine blends? How do the tongue and olfactory bulb work together? We explore these wine aromas with the world-famous Le New Du Vin (The Nose of Wine) wine aroma kit. This kit contains 54 distinct wine aromas that your nose will be able to sniff, providing you a real sensory experience.

Frequently asked questions:
Who can take the class?
Anyone can take the class as we do not serve alcoholic wine in the class.
However, minors under 18 would need parental permission.
Why don't you serve wine in your class?
The primary reason is that you must be 21 to drink alcohol in Tennessee yet only 18 to serve it. A large portion of our hospitality workforce are 18, 19 and 20-year-olds, and we would have to exclude them from the class if alcohol was served. A secondary reason is to keep the class affordable to the public. If we were to provide a tasting of each of the 18 varietals we cover, this one-day course would be $300+ instead of $90. And finally, Tennessee law allows liquor stores and liquor distributers to have "wine tastings" whereas grocery stores and on-premise restaurants are not allowed.
While we are available for private classes in coordination with a liquor distributor, we are unable to offer tastings during public classes at our facility.
If I cannot drink wine in class, how can I know how it tastes?
We use varietal grape juices that popular wines are made of and with our Le Nez Du Vin aroma kit and tasting drills we come very close to approximating how these wine taste without the alcohol.
Will I be a Sommelier after I take this class?
No. This class provides great information to those new to wine. Becoming a Sommelier, which means "Wine Steward" in French, requires many years of dedication, training and practical exams depending on the level achieved.
What do we get for taking the this class?
All participants will receive a certificate of completion and a waiter's corkscrew, both shown to the left.
Do I have to bring materials or study anything before the class?
No advance study is needed.
Is there a meal break?
We do take a break and eating options include The Airport Café on the first floor of our building, or The Laredo Taco Company next door. And of course you may bring any snacks or beverages that you want to consume during class. We provide free bottled water and coffee.
What is your refund policy?
Our refund policy: a full refund will be offered if cancellation notification is provided 24 hours or more in advance. If you provide us less than a 24-hour notice or you miss your scheduled class altogether, we are happy to reschedule or transfer to another individual.
Where is your classroom located?
